For National Burger Day on August 25th, I want to share how I like to cook a beautiful Wagyu burger.
The nice thing about Wagyu is that it takes much less time to cook than regular beef due to the intense marbling and higher fat content.
What is Wagyu beef?
Wagyu is a short name for a special breed of Japanese cattle, the Japanese Wagyu. These cattle are raised on a superior diet and under the best living conditions to produce the richest and highest quality beef.
What's the difference between American Wagyu and Japanese Wagyu beef?
Japanese Wagyu are very rare and a delicacy made for traditional Japanese dishes like shabu shabu, yakiniku, and stir fry. Japanese Wagyu beef boasts a tender, rich flavor that coats your mouth; a very exquisite experience.
American Wagyu beef's fat content is lower than the traditional Japanese Wagyu. However this creates a robust, rich beefy flavor that many beef lovers expect.
When included in the most popular dishes, American Wagyu beef just tastes better. This beef is best used for grilling, roasting and pan searing.
Both forms of Wagyu are luxury beef and will elevate any ordinary dish...and I'm sure you'll never want a regular hamburger again!
The Best Way to make a Wagyu burger at home.
To cook your Dry-Aged American Wagyu patties at home, first thaw your Wagyu ground beef and allow it to reach room temperature for a more even cook.
Form the meat into patties being careful not to overwork the meat.
Sprinkle each side with a little salt and pepper. Wagyu beef is so flavorful, you wont need any more seasoning than that.
1. Pan Sear
I like to pan sear on each side, add green chilies and cheese, then cover with lid. This will steam the burger while accelerating the time it takes to melt the cheese.
Cook on medium high heat for 4 minutes per side for a beautiful medium well on an 8-ounce patty, or two minutes per side for a 4-ounce patty.
Cover and continue to cook for an additional minute on medium low heat.
2. In the Oven
Preheat your oven to a low broil, and place your patties on a broiler pan. Place the pan on a rack and put in the oven about 6 inches from the broiler.
Cook the patties until they begin to brown on top, about 4 minutes, flip the patties and let them brown on the other side, about 4 minutes as well.
Take the meat out, let it rest a few minutes and assemble your burger!
3. On the Grill
To prepare on the grill, light the fire and close the lid for 15 minutes to preheat the grill, letting it reach about 500 degrees Fahrenheit.
Set your patties directly on the grate to grill, cook for 4 minutes, flip and cook for another 4 minutes.
Remove from heat, let them rest and enjoy.
